What’s it really like behind the scenes of a crewed yacht charter in The Bahamas? Beyond the picture-perfect beaches and turquoise waters, there’s a dedicated crew working hard to make every guest’s experience seamless and unforgettable. In this interview, we step into the sandals of a Dream Yacht hostess and chef Tia Mills, who shares what it takes to bring the magic to life—one meal, smile, and sunset at a time. From favourite island dishes to the art of effortless hospitality, get a firsthand look at the heart and soul of charter life in the Bahamas.

How did you end up in this role?

I originally stepped into this role quite organically. I had a background in hospitality and guest service, and when the opportunity with Dream Yacht came up, it felt like the perfect fit. Since then, I’ve grown so much in the role, learning the rhythms of charter life and how to create seamless, memorable experiences for guests on board.

What is your favourite part about working on yacht charters?

What I enjoy most about working on charter holidays is the personal connection with guests and the chance to help shape their dream getaway. I love creating a warm, welcoming environment. From preparing beautiful meals and refreshments to setting up themed nights or just anticipating small touches that make people feel at home at sea.

What does a typical day look like for you?

A typical day usually starts with morning tidy and breakfast service, followed by helping the skipper with guest briefings or activities, then light housekeeping, meal prep, and coordinating with the crew to make sure everything runs smoothly. The days are full but rewarding, especially seeing guests relax and truly enjoy themselves.

What is the biggest misconception people have about your role?

One of the biggest misconceptions about the hostess role is that it’s just preparing and serving food, or cleaning. But there’s so much more to it. We’re often the heart of guest experience: organizers, communicators, and caretakers all at once. It requires real adaptability, attention to detail, and a calm friendly demeanour even when unexpected challenges arise.

Being part of someone’s holiday and helping them make beautiful, lasting memories is something I take seriously and personally. Guests trust us with their time and money, and I believe it’s our job to make sure they leave with stories they’ll share with family and friends, ideally encouraging others to come experience a Dream Yacht Charter too!

What is your favourite part of the job?

One of the most rewarding parts of this job is being able to create warm, thoughtful experiences through food. I work closely with guests to plan meals that they’ll enjoy going over the menu, adjusting for dietary needs, and even introducing them to local Bahamian and Caribbean dishes. I try to use fresh, seasonal ingredients and align the menu with the sailing destination so that the culinary experience becomes part of the overall adventure. My passion lies in creating thoughtful, innovative meals that reflect the spirit of the Caribbean and celebrate the flavours of the Bahamas.

What is your go to dish when you want to impress guests?

One of my signature dishes is a beautifully prepared grouper filet served with mango salad. Guests also love our Bahamian-style macaroni and cheese, fresh conch salad, and of course, crispy conch fritters all dishes that capture the taste and essence of island life.

For dessert, I often serve traditional local favourites like pineapple upside-down cake, coconut tart, or key lime pie sweet, simple, and deeply satisfying treats that leave guests with a taste of the Bahamas.

What steps do you take to reduce food waste and manage inventory onboard?

Reducing food waste is also something I prioritize. I only prepare portions I know the guests will enjoy, and I coordinate mealtimes with them to make sure everything flows seamlessly. It’s all about being intentional, efficient, and attentive.

What is your routine between charters?

Between charters, I shift my focus back to my family especially my children and my mom. Since I often spend 5 to 7 days at sea, those breaks are important for reconnecting. I help my kids with homework, talk to them about teenage challenges, and try to be present in the ways I can even if it’s just over the phone or a short visit home.

If you could design a dream charter experience for yourself, what would it include?

If I could design my own Dream Yacht Charter holiday, it would be something simple and special — just my kids, my mom, and a few close friends onboard. I’d want it to be all about relaxing, enjoying each other’s company, unwinding, and maybe playing some games or discovering quiet little island spots. The same kind of peace and joy I try to create for guests is exactly what I’d want for myself.

From the early morning coffee prep to the final sunset toast, it’s clear that being a hostess on a crewed charter is about so much more than meals and housekeeping—it’s about crafting unforgettable moments at sea.
