Offering a selection of exquisite dishes, Brandywine offers guests a unique experience where you will fall in love with the sunsets and delicate breeze as you sample some of the Mediterranean infused cuisine.<\/span><\/p>\n\n\n\n<p><span style=\"font-weight: 400;\">Choose from a selection of starters including tuna tartare, escargot and shrimp Catalan, followed by freshly caught king fish, scrumptious steak or tasty chicken with spinach sauce.&nbsp;<\/span><\/p>\n\n\n\n<p><a href=\"mailto:brandywinerestaurant@hotmail.com\"><span style=\"font-weight: 400;\">Book online<\/span><\/a><span style=\"font-weight: 400;\"> or call 1-284-495-2301 to make a reservation.<\/span><\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Traditional British Virgin Island recipes<\/h2>\n\n\n\n<p>There are so many dishes we could share with you when looking for our favourite BVI recipes, but we&#8217;ve narrowed it down to the two most popular according to our customers&#8230;<\/p>\n\n\n\n<h4 class=\"wp-block-heading\">Fish and Fungi<\/h4>\n\n\n<div class=\"wp-block-image\">\n<figure class=\"aligncenter\"><img decoding=\"async\" src=\"https:\/\/www.dreamyachtcharter.com\/wp-content\/uploads\/2022\/09\/fish-and-fungi.jpg\" alt=\"Fish and Fungi\" class=\"wp-image-9347\"\/><\/figure>\n<\/div>\n\n\n<p><span style=\"font-weight: 400;\">A delicious dish comprising freshly caught fish and cornmeal, complimented by a selection of herbs and spices, fish and fungi can be easily replicated at home, here in the UK. Here\u2019s how to make it:<\/span><\/p>\n\n\n\n<p><b>Ingredients:<\/b><\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li><span style=\"font-weight: 400;\">2 tbsp good quality vegetable oil<\/span><\/li>\n\n\n\n<li><span style=\"font-weight: 400;\">1 large brown onion, finely chopped<\/span><\/li>\n\n\n\n<li><span style=\"font-weight: 400;\">1 green pepper, chopped into 1cm pieces\u00a0<\/span><\/li>\n\n\n\n<li><span style=\"font-weight: 400;\">1 scotch bonnet chilli, finely diced (this can be substituted for a milder chilli such as a jalapeno if a scotch bonnet is too spicy for you)<\/span><\/li>\n\n\n\n<li><span style=\"font-weight: 400;\">1 celery stick, chopped into 1cm pieces<\/span><\/li>\n\n\n\n<li><span style=\"font-weight: 400;\">3 cloves of garlic, minced finely<\/span><\/li>\n\n\n\n<li><span style=\"font-weight: 400;\">\u00bd tsp dried thyme<\/span><\/li>\n\n\n\n<li><span style=\"font-weight: 400;\">2 tbsp white wine vinegar<\/span><\/li>\n\n\n\n<li><span style=\"font-weight: 400;\">400g chopped tomatoes<\/span><\/li>\n\n\n\n<li><span style=\"font-weight: 400;\">1 tbsp tomato paste<\/span><\/li>\n\n\n\n<li><span style=\"font-weight: 400;\">130g polenta<\/span><\/li>\n\n\n\n<li><span style=\"font-weight: 400;\">1 tbsp salted butter<\/span><\/li>\n\n\n\n<li><span style=\"font-weight: 400;\">100g thickly sliced okra (fresh or frozen), cooked<\/span><\/li>\n\n\n\n<li><span style=\"font-weight: 400;\">2 limes, squeezed for juice<\/span><\/li>\n\n\n\n<li><span style=\"font-weight: 400;\">2 boneless flaky fish fillets &#8211; any flaky white fish works well in this recipe such as monkfish or cod. However, if you want to be really authentic, go for snapper if possible<\/span><\/li>\n\n\n\n<li><span style=\"font-weight: 400;\">Salt and pepper to taste<\/span><\/li>\n<\/ul>\n\n\n\n<p><b>Method:<\/b><\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li><span style=\"font-weight: 400;\">Heat oil in large saucepan over medium heat. Add in the onion, pepper, celery, garlic, thyme and \u00bc teaspoon salt. Cook until the onions are translucent (about eight minutes)\u00a0<\/span><\/li>\n\n\n\n<li><span style=\"font-weight: 400;\">Add in the vinegar, tomatoes, tomato paste and 60ml water\u00a0<\/span><\/li>\n\n\n\n<li><span style=\"font-weight: 400;\">Reduce heat to low, and cook for approx. 10 minutes, adding salt to taste<\/span><\/li>\n\n\n\n<li><span style=\"font-weight: 400;\">Once the sauce has simmered for 10 minutes, remove from heat and put to one side<\/span><\/li>\n\n\n\n<li><span style=\"font-weight: 400;\">To make the fungi, bring 500ml of water to the boil and add a tsp of salt, stirring continuously<\/span><\/li>\n\n\n\n<li><span style=\"font-weight: 400;\">Slowly add the polenta and reduce the heat to low. Simmer, stirring frequently, until it holds its shape on a spoon but remains tender (approx. 15 minutes.) Add more water if it becomes thick but the polenta is still quite solid<\/span><\/li>\n\n\n\n<li><span style=\"font-weight: 400;\">Add the butter and okra<\/span><\/li>\n\n\n\n<li><span style=\"font-weight: 400;\">In a separate pan, bring 1l of water to the boil and add in the lime juice, reducing the heat to low. Gently lower the fish into the boiling water and simmer for approx. 10 minutes, or until it flakes easily with a fork. Drain and pat dry with kitchen paper<\/span><\/li>\n\n\n\n<li><span style=\"font-weight: 400;\">Spoon two large scoops of the polenta fungi onto a plate and top with half of one of the fish fillets. Spoon over the sauce and serve.<\/span><\/li>\n<\/ul>\n\n\n\n<h4 class=\"wp-block-heading\">The Painkiller Cocktail<\/h4>\n\n\n<div class=\"wp-block-image\">\n<figure class=\"aligncenter\"><img decoding=\"async\" src=\"https:\/\/www.dreamyachtcharter.com\/wp-content\/uploads\/2022\/09\/painkiller-cocktail.jpg\" alt=\"Painkiller Cocktail\" class=\"wp-image-9352\"\/><\/figure>\n<\/div>\n\n\n<p><span style=\"font-weight: 400;\">The BVIs signature cocktail, our friends at the BVI Tourist Board have shared their recipe for a traditional painkiller &#8211; a colourful combination of Caribbean rum, coconut and nutmeg mixed to perfection and served over ice.<\/span><\/p>\n\n\n\n<p><b>Ingredients:<\/b><\/p>\n\n\n\n<p><span style=\"font-weight: 400;\">50ml good quality dark rum &#8211; we like to use <\/span><a href=\"https:\/\/www.soggydollarrum.com\/\"><span style=\"font-weight: 400;\">Soggy Dollar Rum<\/span><\/a><\/p>\n\n\n\n<p><span style=\"font-weight: 400;\">200ml pineapple juice<\/span><\/p>\n\n\n\n<p><span style=\"font-weight: 400;\">25ml orange juice<\/span><\/p>\n\n\n\n<p><span style=\"font-weight: 400;\">50g cream of coconut<\/span><\/p>\n\n\n\n<p><span style=\"font-weight: 400;\">A pinch of nutmeg<\/span><\/p>\n\n\n\n<p><span style=\"font-weight: 400;\">Ice<\/span><\/p>\n\n\n\n<p><strong>Method:<\/strong><\/p>\n\n\n\n<p><span style=\"font-weight: 400;\">Put all ingredients except the nutmeg and ice into a cocktail shaker, shake vigorously and poor over ice into a cocktail glass. Garnish with a cherry, fresh pineapple and some freshly grated nutmeg.<\/span><\/p>\n\n\n\n<h2 class=\"wp-block-heading\">British Virgin Island fun facts<\/h2>\n\n\n\n<ul class=\"wp-block-list\">\n<li><span style=\"font-weight: 400;\">The Soggy Dollar Bar is named as such due to guests having to swim from their boats across to the beach bar.
