The formal dining setting is perfect for a romantic evening ashore before taking a stroll along the cay\u2019s East Beach, leaving footprints in the sand.<\/span><\/p>\n\n\n\n<blockquote class=\"wp-block-quote\">\n<p><em>We stopped into Highbourne Cay twice during our sail through The Exumas, and both times we ate at Xuma. And both meals were 5-star, from the food to the service. The head chef, Jason Wallace, was educated in the UK and returned to the Bahamas to work in one of the island\u2019s restaurants. <\/span><\/p>\n\n\n\n<blockquote class=\"wp-block-quote\">\n<p><em>The food at MacDuff&#8217;s was really nice. We had breakfast, lunch and dinner while we stayed in Norman&#8217;s Cay. Try it as an on-board one pot meal while sailing.Here\u2019s how to make it:<\/span><\/p>\n\n\n\n<p><b>Ingredients:<\/b><\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li><span style=\"font-weight: 400;\">2 large conchs, cleaned<\/span><\/li>\n\n\n\n<li><span style=\"font-weight: 400;\">1\/2 large onion, diced<\/span><\/li>\n\n\n\n<li><span style=\"font-weight: 400;\">1.5 tomatoes, diced<\/span><\/li>\n\n\n\n<li><span style=\"font-weight: 400;\">4 potatoes, chopped<\/span><\/li>\n\n\n\n<li><span style=\"font-weight: 400;\">2 limes<\/span><\/li>\n\n\n\n<li><span style=\"font-weight: 400;\">1.5 tsp fresh thyme<\/span><\/li>\n\n\n\n<li><span style=\"font-weight: 400;\">120ml vegetable oil<\/span><\/li>\n\n\n\n<li><span style=\"font-weight: 400;\">35g plain flour<\/span><\/li>\n\n\n\n<li><span style=\"font-weight: 400;\">1.5 tbsp tomato paste<\/span><\/li>\n\n\n\n<li><span style=\"font-weight: 400;\">1.5 tbsp ketchup<\/span><\/li>\n\n\n\n<li><span style=\"font-weight: 400;\">Hot pepper sauce or red pepper flakes to taste<\/span><\/li>\n\n\n\n<li><span style=\"font-weight: 400;\">3 tbsp salt<\/span><\/li>\n\n\n\n<li><span style=\"font-weight: 400;\">2 tsp pepper<\/span><\/li>\n\n\n\n<li><span style=\"font-weight: 400;\">1500ml water<\/span><\/li>\n<\/ul>\n\n\n\n<p><b>Method:<\/b><\/p>\n\n\n\n<ol class=\"wp-block-list\">\n<li><span style=\"font-weight: 400;\">Use a mallet or other object to tenderise the conch meat<\/span><\/li>\n\n\n\n<li><span style=\"font-weight: 400;\">Place the conch in a pot of water, that just covers them. Boil for 25-minutes.<\/span><\/li>\n\n\n\n<li><span style=\"font-weight: 400;\">In a large pot, add the oil and allow to heat up for a minute<\/span><\/li>\n\n\n\n<li><span style=\"font-weight: 400;\">Add the flour and stir to make a roux. Let the roux simmer for about five minutes. DO NOT let it burn!<\/span><\/li>\n\n\n\n<li><span style=\"font-weight: 400;\">Add the tomatoes, onions, thyme, pepper sauce\/red pepper flakes, salt and pepper and stir. Let simmer for a minute or two<\/span><\/li>\n\n\n\n<li><span style=\"font-weight: 400;\">Add the potatoes, tomato paste and ketchup. Stir and let simmer for about 15-minutes<\/span><\/li>\n\n\n\n<li><span style=\"font-weight: 400;\">Meanwhile, take the conch out of the water and cut it into chunks<\/span><\/li>\n\n\n\n<li><span style=\"font-weight: 400;\">Cover the pot and simmer until the potatoes are done<\/span><\/li>\n\n\n\n<li><span style=\"font-weight: 400;\">Serve with some fresh bread and enjoy!<\/span><\/li>\n<\/ol>\n\n\n\n<h4 class=\"wp-block-heading\">Bahama Mama<\/h4>\n\n\n<div class=\"wp-block-image\">\n<figure class=\"aligncenter\"><img decoding=\"async\" src=\"https:\/\/www.dreamyachtcharter.com\/wp-content\/uploads\/2022\/09\/bahama-mama.jpg\" alt=\"Bahama Mama\" class=\"wp-image-7014\"\/><\/figure>\n<\/div>\n\n\n<p><span style=\"font-weight: 400;\">A deliciously sweet and refreshing cocktail, perfect for enjoying on the deck of your yacht while you watch the sun set in the distance over The Exumas. Here\u2019s how to mix together a perfect Bahama Mama:<\/span><\/p>\n\n\n\n<p><b>Ingredients:<\/b><\/p>\n\n\n\n<p><span style=\"font-weight: 400;\">15ml good quality rum<\/span><\/p>\n\n\n\n<p><span style=\"font-weight: 400;\">15ml malibu (or equivalent)<\/span><\/p>\n\n\n\n<p><span style=\"font-weight: 400;\">15ml grenadine<\/span><\/p>\n\n\n\n<p><span style=\"font-weight: 400;\">30ml orange juice<\/span><\/p>\n\n\n\n<p><span style=\"font-weight: 400;\">30ml pineapple juice<\/span><\/p>\n\n\n\n<p><span style=\"font-weight: 400;\">Crushed ice.<\/span><\/p>\n\n\n\n<p><b>Method:<\/b><\/p>\n\n\n\n<p><span style=\"font-weight: 400;\">Put all ingredients in a cocktail shaker, shake vigorously and serve in a cocktail glass.
